You may or may not have heard yet but I’m one of the 2015 Dole Get Up and Grow! ambassadors, joining an incredible group of healthy living bloggers to help encourage people to eat more fruits and veggies.

Dole Get Up and Grow!™ is a year-long healthy lifestyle initiate designed to create a happier and healthier world by encouraging North Americans to eat more fresh fruits and vegetables. The program uses recipes, nutritional tips, an interactive healthy-eating pledge and a summer-long tour to help show people that plant-based eating can be fun, easy and delicious!

Dole Get Up and Grow! Tour

The Get Up and Grow! Tour kicked off earlier this year and will be bringing an expanded version for Dole’s popular mobile fruit and veggie feast to over 480 supermarkets and special events across 45 cities, 25 U.S states and even four Canadian provinces! They’re even hittin’ up Vancouver! Woohoo!

The 115-day, 11,700-mile journey represents a joint effort between Dole Fresh Fruit, Dole Fresh Vegetables and the Dole Nutrition Institute, and is co-sponsored by Blue Diamond Almond Breeze®. The colourful Get Up and Grow! caravans with rolling kitchens will deliver new recipes, product samples, a DIY smoothie bar, giveaways and lots of fun activities to showcase just how fun and yummy and plant-based diet can be.

Dole Get Up and Grow Tour! and Spinach-Avocado Hummus Recipe

Some of the recipes they’ll be sampling are a Banana and Blue Breakfast Smoothie, Charred Summer Salad, the Caesar’s Bounty Salad, a Power Punch Smoothie, Southwestern Gazpacho and Spinach-Avocado Hummus.

I couldn’t leave you without this Spinach-Avocado Hummus recipe from the tour, YUM!! Look at all the super foods in there! This recipe would be perfect for summer BBQ’s and picnics sat the beach!

Spinach-Avocado Hummus

Ingredients

  • ½ head DOLE® Cauliflower
  • ¼ cup hulled pumpkin seeds
  • 2 tablespoons tahini paste
  • 1 teaspoon cumin seeds
  • 1 garlic clove
  • 2 cups DOLE Baby Spinach
  • ½ avocado
  • ¼ cup orange juice
  • 3 tablespoons lime juice
  • 2 tablespoons grated lime peel
  • 1 tablespoon chia seeds
  • Salt to taste

Instructions

  1. Pull off leaves around cauliflower and break it into small florets. Place into food processor or an emulsifier blender and pulse until it becomes coarse texture of “rice”, remove and set aside.
  2. Combine pumpkin seeds, tahini paste, cumin and garlic clove in food processor or blender. Cover; blend until smooth. Add cauliflower, baby spinach and avocado to pumpkin seed mixture. Process until smooth.
